In Need of Change

"Nothing will benefit human health and increase the chances for survival of life on earth as much as the evolution to a vegetarian diet."

HEALTH 2009

2.0 FOOD KNOWLEDGE

So ... you have read past the first page on health and your open minded enough to want to learn more of what it has taken me 6 years to figure out. Congratulations on trusting me to share even more information that will change how you perceive food forever. Be assured I am not going to try and sell you something at the end of this journey. My only motivation is to share what I have learned because I know it will greatly improve your health. With good health you can be free to enjoy life to the fullest with a great quality of life along the way. Here is what you need to know about thriving on a plant based diet.

It would be very simple if I could tell you that no matter what you eat, as long as it is a plant based food it is healthy and you will thrive eating it on a regular basis. Sorry, but man has heavily processed plant based foods and turned them into "dead" foods that are devoid of the minerals, enzymes and vitamins that we need.

I will divide foods into three color groups to help you visualize this important information. CODE RED foods, CODE YELLOW foods and CODE GREEN foods will help you understand how to eat the healthiest way possible.

CODE RED foods - Don't make these a major part of your diet and ideally avoid them all together. Most of the foods I place in this catagory are here because they are highly modified from anything nature intended and this can cause known and unknown detrimental effects to your bodie's chemistry or are just empty calories that have no nutritional value. Most are acidifying to the body as well which is

Anything that comes from an animal.
Anything made with hydrogenated oils
Anything made with high fructose corn syrup
Foods fried in oils - especially Ollestra
Soda and diet soda and coffee (very acidic!)
Foods/liquids cooked in a microwave - Learn more
Starches cooked any way except in water
- Learn about Acrylamide and here
Foods with chemicals in the ingrediant list
White bleached flour products - learn why
Most "Immatation" meat products - highly processed with chemicals and acidic
Foods high in refined sugars (more acidity!)
Unfiltered city water - Chlorine is bad to consume or even shower in.

CODE YELLOW foods - Likely you can have a healthy existence including these foods but try to have more green foods in your diet than yellow foods.
Canned plant based foods
Cooked plant based foods
Non- organic fruits and vegetables, nuts, seed and legumes

Keep to less than 15% of your diet

CODE GREEN foods - Raw foods are in the form nature intended. Even better when organic and if seeds with their live enzeymes activated by sprouting.
RAW ORGANIC foods
Green fruit Smoothies (fruits and dark green leafy vegetables)
Raw foods made with sprouted seeds, nuts, and legumes
Organic fruits and vegetables, nuts, seed and legumes - See list of pesticide levels

ACIDITY
This is a very important concept to understand because it is perhaps the single most important key to being healthy. Most people have no idea that they are way too acidic and it can be the primary cause of most of their health problems. Acidity (or the opposite alkalinity) is measured using a 14 point scale labeled"pH" where 7.0 is neutral (pure water) pH and anything less than 7.0 is acidic and any reading above 7.0 is alkaline. The human body is a wonderful chemical machine that is meant to function with the blood at about 7.3-7.4 pH (slightly alkaline) and the body will do many things to keep this critical balence at that level. Two important things you need to know to understand why keeping your pH slightly alkaline is so critical are first, bacteria and yeast thrive in an acidic body, and second is that cancer thrives in an acidic body. Read that again. There are many other reasons to avoid being acidic like ostioporosis, diabetes, tooth decay, arthritus, joint pain and many others. At this point in your education on how to eat healthy it should be no surprise when I tell you that it is the meat and cheese that are the most acid causing foods. Adopting a healthy vegan diet (mostly yellow and green catagory foods from above) will greatly reduce your acidity and make things much easier on your body. There are simple ways to adjust your pH by using small pH test kits to measure your urine and saliva pH . The remedy is as simple as squeezing a bit of lime or lemon into your water and/or take some suppliments designed to alkalize the water that you drink and buffer the acid in your system. Learn more here and see a list of what foods stand where on the side of acidity or alkaline.

Here is a very long paper writen by a Dr that explains in detail why keeping your body in the alkaline is so important:
pH of the Human Body is Critical for Health

Vitamin B12
This essential vitamin comes from meat and dirt. It's the only suppliment you need to take if you are on a 100% plant based diet.

PROTEIN:

It's the first question meat eaters ask when considering a healthier way of eating... "Where will I get my protein?" The truth is that a well rounded Vegan diet supplies adequate amounts of protein. Our SAD (Standard American Diet) is a "protein overload" diet.

Think you need to eat meat to build muscle - watch this video on YouTube.com about Vegan Bodybuilder Kenneth G. Williams (flash video needs broadband connection)
VEGAN MUSCLE

Do your own research... The more you learn the more likely you are to see that switching to a 100% plant based diet is the best thing you will ever do for yourself and as a bonus it is the best thing you could ever do for the planet. Be wary of advice from those who are profiting from their recommendations. Our only motivation here on this site is to help you be a happier and much healthier person. Through my own experience and extensive research I am confident that you will be forever grateful to those who showed you this path.
